Leeks are tasty winter vegetables that are easy to grow, and they can be substituted for onions in the kitchen. To blanch leeks, plant each seedling or plant at the bottom of a hole that is about 15cm (6″) deep. Fill in around the base of the leek as it gradually gets taller. By the end of the season, the bottom of each plant will have a 15cm (6″) section that is tender and white.
